RAW CARROT CAKE

WHAT YOU NEED

BASE

  • 1 cup grated carrot (I used the carrot pulp from jucing)

  • 1 cup walnuts

  • ½ cup pitted dates

  • ¼ cup shredded coconut

  • 2 tbsp coconut oil

  • 2 tbsp almond butter

  • 1 tsp cinnamon

  • A pinch of sea salt

 

WHAT TO DO

In a food processor mix all the ingredients together.

Press into a lined pan and place in freezer.

FROSTING

  • 1 cup soaked cashew nuts (soaked at least 1 hour)

  • 3 dates (soaked at least 1 hour)

  • 4 tbsp coconut oil

  • 1 tsp vanilla powder

  • 1 tsp honey

  • ½ tsp lemon juice

  • A pinch of salt

WHAT TO DO

In a food processor mix all the ingredients together

Place the frosting on the base and top with walnuts.

Refrigerate for some hour. Take out and cut into pieces. Enjoy!

TIPS AND TRICKS

Afterwards best stored in the fridge.
