

COOKIE DOUGH PIE
WHAT YOU NEED

1 can of chickpeas (rinsed and drained. About 240g)

½ cup oat flour

12 pitted dates (soaked for at least 1 hour)

½ cup of oat milk (you can use any kind of milk)

1 ½ tbsp coconut oil
-
2 tbsp honey
-
4 tbsp almond butter (peanut butter works as well)

1 tsp vanilla powder
-
1 tsp baking powder
-
A pinch of salt

½ cup of chocolate chips
WHAT TO DO
Mix everything together in a food processor or a high-speed blender, except the chocolate chips.
When the dough is smooth mix in the chocolate chips gently and stir together with a spoon.
Place the dough in a baking tray. I prefer a non-stick or silicone baking tray.
Bake for 35 min at 175°C
Let it cool off before eating.
Best stored in the fridge afterwards.
Tip:
Melt two pieces of dark chocolate in the microwave and spread it over the cake for a more festive look.
