COOKIE DOUGH PIE

WHAT YOU NEED

  • 1 can of chickpeas (rinsed and drained. About 240g)

  • ½ cup oat flour

  • 12 pitted dates (soaked for at least 1 hour)

  • ½ cup of oat milk (you can use any kind of milk)

  • 1 ½ tbsp coconut oil

  • 2 tbsp honey

  • 4 tbsp almond butter (peanut butter works as well)

  • 1 tsp vanilla powder

  • 1 tsp baking powder

  • A pinch of salt

  • ½ cup of chocolate chips

 

WHAT TO DO

Mix everything together in a food processor or a high-speed blender, except the chocolate chips.

When the dough is smooth mix in the chocolate chips gently and stir together with a spoon. 

Place the dough in a baking tray. I prefer a non-stick or silicone baking tray.

Bake for 35 min at 175°C

Let it cool off before eating.

Best stored in the fridge afterwards.

Tip: 

Melt two pieces of dark chocolate in the microwave and spread it over the cake for a more festive look.
