I remember making this on a cold autumn day. Craving a classic apple cake and lots of cinnamon! 
I love this in the afternoon served with some vanilla skyr/quark on the side and a good cup of tea.




  • 3 apples

  • 2 eggs

  • 4 tbsp applesauce

  • ¾ cup milk

  • 1 cup oat flour

  • 1 ½ cup almond flour

  • 1 ½ tsp cinnamon

  • 1 tbsp liquid stevia

  • 1 tsp baking powder



Peel the apples, remove the core and cut them into wedges. Place them in a bowl with cold water.


Mix together eggs, applesauce, stevia and milk. Add almond/oat flour and baking powder. Mix well.


Place the cake batter in a pan (22x30 works well). If your pan isn’t a nonstick or silicone, then butter the sides with coconut oil. Sprinkle 1 tsp cinnamon over the cake batter.


Drain the apple wedges and sprinkle ½ tsp cinnamon over the apples and make sure they’re all covered with cinnamon before you place them on the cake.


Bake in the oven at 200°C for 35-40 min
